I have brocoli, mushrooms and garlic. Oh and some spring onions. What to do with them..

Think I might make a garlic sauce, cook some whole meal pasta, brocoli, fry some garlic mushrooms, throw it all together and sprinkle on top some chopped up spring onions and chopped toasted cashew nuts. :)

Trying vegan sausages, cooked on hob with onion and garlic and then mixed with brown rice and brocoli.. sauerkraut on the side..

We had vegan sausages tonight!
Followed by coconut and banana rice pudding made with almond milk.
Vegan Wednesday in my house xx

Am doing vegan Thursday too  ;D

Baked aubergines and potatoes with an Indian lentil soup on the side

Watermelon and strawberries to follow

(I suspect my sons will pop in to McDonald's on the way home  ;D)

That sounds nice Agatha.

I just had home made chilled Gazpacho and 2 slices of pumpkin seed rye bread with vegan mayonnaise and slices of vio life cheese.

If you like lentil soup, I found a nice recipe for red lentil and carrot. It's really nice. You can google it. 👍😊

Been on the lunchtime news that vegans are more at risk of strokes than meat eaters, due to possible lack of vitamins :-\

Thanks for that Jaycee. Just had a quick look at it. Apparently needs more research.
Whilst those on a plant based diet are 22% less likely to have heart disease, this report is suggesting, if they are not getting good vitamins etc, there might be an increase in strokes.

Therefore, very important to have a good balanced diet rich in vitamins for sure!

Found this about this latest report:

Tracy Parker, senior dietitian at the British Heart Foundation, said: "Whilst this is an interesting finding, this study is observational and doesn't provide us with enough evidence, so more research in this area would be needed."

I am not a big meat eater in any case, and i love all veg, but not a fruit lover at all,
I do take vitamin supplements, but due to health condition, not supposed to have much vitamin C or Iron,

Do you like making soups Jaycee?
I'm about to make a vegan cream of celeriac. It's really nice, very tasty and full of goodness.

1 large or 2 small celeriac. ( cut off outer skin and base )
1 leek
Veg stock
1 onion
Olive oil
120g soaked cashew nuts
2 or 3 garlic cloves

Fry onion and leek until soft, add chopped up celeriac, garlic, stir in and cook for a bit, add stock and cashews. Simmer softly until ready. Then liquidise. Yum!!

Been veggie 26 years now and things really have come on in leaps and bounds,one of my favourite recipes is chickpea and cashew nut balls with a chilli sauce,the balls are onion,chopped & fried,tsp yeast extract,2oz breadcrumbs,egg yolk all mixed into the mashed chickpeas and cashews, I use a small tin and an equal amount of cashews,then you fry them the sauce is chopped chilli,spring onions,2tbs red wine vinegar,small tin of chopped tomatoes,2tbs tomato purée & 2 tbs sugar all on a bed of rice or noodles,it's yummy.......honest 😊

Me too Jaypo and it was good to see my blood test results, B12, calcium etc etc all in good range.
That recipe looks great. I'll give it a go.
It's funny that without really planning it, I'm heading more and more vegan, although still do have eggs etc now and then.
I love cauldron veggie sausages and they have egg white powder. Also like sage and marjoram vegan sausages.
I've discovered I really like almond milk and also coconut milk on muesli. :)

Don't think I could give up cheese,just love it,I've had to give up so many things because of my gut,had a blood test done and I'm wheat intolerant,can't have almonds or hazelnuts as I'm highly intolerant to them too,so to then give up cheese and eggs nooooooooo,although I'm not that keen on eggs but use them in cooking to bind stuff.
The new birds eye range is good,sausages and burgers are really nice,also,believe it or not farmfoods veggie stuff really nice,there meatless balls especially,great thread 💕

Tried a different way of cooking pasta tonight. Called one pot pasta.
You can try different ingredients, i used:
1 onion, 2 cloves garlic, cooked in a deep frying pan in rapeseed oil, throw in some artichoke hearts, then add chopped up vegan sausages and cook in the onion mix until golden brown. Then add wholewheat pasta ( uncooked) and add veggie stock. Simmer for 10 ish minutes.. and serve... be sure to allow the stock to reduce well. If interested, go online and google one pot pasta. It's very tasty. X
