Been veggie 26 years now and things really have come on in leaps and bounds,one of my favourite recipes is chickpea and cashew nut balls with a chilli sauce,the balls are onion,chopped & fried,tsp yeast extract,2oz breadcrumbs,egg yolk all mixed into the mashed chickpeas and cashews, I use a small tin and an equal amount of cashews,then you fry them the sauce is chopped chilli,spring onions,2tbs red wine vinegar,small tin of chopped tomatoes,2tbs tomato purée & 2 tbs sugar all on a bed of rice or noodles,it's yummy.......honest 😊
