Last night it was left over cold roast beef (from Sun) homemade red cabbage with apples and my own chips (SW variety). We then had stewed rhubarb and low fat custard.
Tonight it's going to be sausages, because I've just taken them out of freezer and I'll go from there.

hope i am not out of order posting on this link, maybe its run its course, but tonight i did crispy chicken breasts with mushy peas and oven chips, now neither of us like oven chips but as other half has recently been told he has diabetes we are trying to eat healthier soo does anyone have ideas of healthier chips if there is such a thing as he doesnt want to give up everything he enjoys

I can remember my mum having great trouble getting her head round what she should and shouldn't eat - she developed stage diabetes at the age of 53.

We don't eat a lot of chips. I like to do wedges. Heat a very little olive or rapeseed oil in an oven tray and put it in to heat. Cut large potatoes into wedges and put into the very hot oil. Scatter some sea salt or paprika over and bake until crispy and golden.
As you know my hubby is diabetic too.
It's a bit of a challenge to start with but become a way of life. I really don't think our diet has suffered and we all eat the same things.

We have also cut down and only have on chips once a week. Don't have anything fried anymore. Just need to cut down on cakes, chocolate and crisps now.

My hubby eats a lot of fruit. Naturally sweet so it fills the gap that a pudding did. Bananas are great. Slow release and good for you. Also porridge for breakfast. Brown bread not white. Salads are difficult at this time of year but there are lots of winter veggies.
Has your hubby got a bit of weight to loose ?

No, he isn't overweight at all. We are just trying to eat healthier.
He easily has his 5 a day, I usually have about 3.

We had roast beef, Fen potatoes chopped into wedges cooked in the oven and peas on top. Yummy.
Did I have my 5 yesterday - nope

I chop Mediterranean vegetables with potatoes, add tomatoes paste, olive oil , a little balsamic vinegar sometimes some Pesto and roast in the oven until crisp, really good to eat as a main dish with chunky bread or added to some protein.
Other times I blend the roasted vegies and make a sort of pate and store in large jar in the fridge, its great as a topping on fish or chicken, or on toast.

With it I'm putting a few new potatoes roasted in the oven in just a coating of olive oil..
some nice spring greens.....
and going to roast myself a parsnip, just because I love them and I'm the only one in the house who does

Cottage pie. There is only hubby and I in tonight but I have made enough for six. Two for mum to be frozen, one for daughter to take to halls also frozen and yet another for son to have later tonight when he gets in.
Our meals often end up like that.
