I chop Mediterranean vegetables with potatoes, add tomatoes paste, olive oil , a little balsamic vinegar sometimes some Pesto and roast in the oven until crisp, really good to eat as a main dish with chunky bread or added to some protein.
Other times I blend the roasted vegies and make a sort of pate and store in large jar in the fridge, its great as a topping on fish or chicken, or on toast.
