Yes you are able to - have a look at Duchesse potatoes - I think these are washed and peeled potatoes sliced very thinly and fried ……… dried on kitchen roll and eaten

Game chips are more like chips than crisps. You would need to cut potatoes almost see through thin to get anywhere near crisps.

Duchesse potatoes are so not crispy
. boiled, piped and toasted off for a crispy top.
If you make your own crisps then they go soggy in less than a day. It's a shame but they just don't work. Game chips are just crisps by a fancy name.
I have tried oven cooking, and deep frying...great to be eaten right away but an hour later they are horrible.....I have tried with potatoes, sweet potatoes, parsnips and carrots.
Better to buy a packet of kettle crisps...Aldis do some nice ones

Eat them immediately

Mine is diabetic too. A few crisps won't do him any harm really.
My hubbies diabetic consultant promotes....a little of what you fancy.
I really wish I could do my own crisps but it's impossible. Popcorn is ok and easy as long as it doesn't have too many toppings.
I think if you have a dehydrating machine then crisps are possible but they are very very expensive.

Duchess potatoes consist of a purée of mashed potato and egg yolk, butter, salt, pepper, nutmeg, which is forced from a piping bag or hand-moulded into various shapes which are then baked at 245 °C until golden.
Yummy but not crisps
