Weigh it TC and make sure you cook it long enough.
It's sounds like a bit of a special one so you have to do it justice  :o.

Good luck wrestling it into your oven. Hope it doesn't fight back  ;D

It weighs just over 7kgs, so I am thinking about 4 hours cooking time.  Quite looking forward to the challenge now :)

Back to my gravy question ladies - yes you are right and that's what I normally do as I'm in my own house.  Wonder what people who have 3  bird roasts do - what gravy do they serve then? 

Thanks for your answers ladies.  Maybe I will just make the gravy in my daughters house as can't face transporting it plus everything else on Xmas day xx

We use the juices mixed with veg water, thickened with corn flour and browning powder.  Stir until it boils then sip to taste - add salt/pepper to improve - will do for 3 bird roast.

Yes thanks CLKD.  I think the problem is making dinner in someone else's house - I normally do it in my house but this year all change - I will go with the flow :) xx

A vegetable stock based gravy will go with both if you can't be bothered doing two different ones.
