My solution to Christmas dinner panic was to raise a daughter who LOVES cooking! Don't know how I achieved that, as the cooking gene bounced over my head without a backward glance!  ;D

Your 4 bird roast will be fine !  cook slowly and baste well ;-)

I have to say for a woman who never cooks you are a fund of ....ummm knowledge CLKD  ;D

Don't cook your turkey on its breast, it becomes a strange shape. Loosen the skin and shove in butter. The more the better. You can turn it to rest on its breast after cooking if you want. That works really well.

My answer to a dry turkey is not to cook one at all  ;D. We are having duck this year.

I wouldn't eat turkey if it was given to me, know what they are stuffed full of in order to grow so quickly  :-X ……… also, I prefer them in the wild but we don't see many in the UK  ::) …… we have a brace of pheasants between 3 of us, [used to be 4/5], they do for a couple of days.  With lots of veg..  Don't take as long to cook as a turkey and don't hang around as long after the 28th  ;)

We have beef for the 26th.  That will feed 5 followed by a small plate for the cat and a couple of days after.  Again with veg.. 

I had DS lessons in School and have watched DH over the years  ;)

I also meant to ask....Have you any idea how difficult it is to joint a turkey CLKD and how awkward the timings would be to cook it in bits.

Life it too short to be honest.

A bird is far more tender and juicy if cooked properly on the bone.

Watching is not the same as doing it yourself. Says she who studied for three years and then worked in kitchens for the next ten. You just get a feel for things if you do it yourself. Most people cook by instinct when they do it for a long time.

Don't know anyone that had had a wild turkey. Do they have them down your way.

No thank goodness!  Enough of those white ones around  ::) [but not for much longer]  …….. it is something I would like, a proper American brown turkey but they are HUGE and can be grumpy  ;D and I would probably get too fond of him  :-X ……… also we have foxes locally.

How about hitting the turkey with a mallet - then everyone gets a piece  ;)

Well we know where to come for cooking advice....the woman with the mallet, chasing an American brown turkey, whilst protecting it from foxes.

Why are we under such stress for one day of the year. Any other day fish fingers would do fine.

I wanted steak but was over ruled, by those who don't have to cook   ;D

Except for my son, who if you feed large enough quantities is happy. He is the only person that I know who can eat a ready meal for four all on his own. And he is skinny  :o
