Mmmm squash is so fine. Hubby not that keen on it but I love it. In soup it's great. Can be skinned, chopped and boiled like carrots/turnip or sliced in half, deseeded, drizzle olive oil over it and roast. Either way is delish! PN may be able to give you better ideas though.
