Roasted vegetables with fresh rosemary from the garden; potato, squash, baby tomatoes, parsnip, onion, carrots, courgettes. Hubby also had a steamed steak & kidney pudding with it.

Nipped to the chippy this evening.  Tomorrow we need to pick runners and peas from the garden and Himself plans to stir fry some chicken breasts with garlic and ginger, the fresh veg. will be cooked gently and served on the side with butter and black pepper .........

Something really nice about picking veg from the garden and then cooking it  :)
PN how do you cook squash ? I've often looked at it in the shop but haven't got a clue where to start. What does it taste like?

Mmmm squash is so fine.  Hubby not that keen on it but I love it.  In soup it's great.  Can be skinned, chopped and boiled like carrots/turnip or sliced in half, deseeded, drizzle olive oil over it and roast.  Either way is delish! 

PN may be able to give you better ideas though.  :)

Real problem trying to think of what to eat these days.  I think we must eat the same 10 meals over and over again. 

Because of the heat at the moment it has to be quick, light and involve all the garden veggies.

My favourite is tomato, onion, green pepper and rocket salad (made and kept in the fridge for an hour) with boiled basmati rice (warm).  It's really easy to make and eat. Sometimes make it with pasta for a change.  However, it's wearing a bit thin now.

I'm quite jealous of the UK choice of supermarket ready-made meals.  We don't get them here.

Yep, all these are good! I also love it peeled, roughly cubed and roasted with baby tomatoes and rosemary, drizzled with olive oil. Mmm

Going to have to try that one PN.  Himself likes a similar one I buy frozen, which also has aubergine and courgettes so maybe I could add those into the mix.  Thanks for that suggestion.

Tonight we are having ham/cheese grills with american fries and salad.

Like the sound of yours Mrs P  I love homemade quiche :)

Ended up doing my midweek roast last night so- having cut all the leftover meat veg stuffing sausages ect into bit sized chunks and covered in gravy, I have topped with short crust pastry and we are having Roast Dinner Pie tonight!!! A yummy idea that was passed on by my son's mates mum and we love them! I particularly love the fact there is so much less washing up as all the hard work was done yesterday!

ooo I fancy vienetta for afters but I haven't got any!!!!!
