Type 2 diabetes

Not sure if it's ok to ask,  but here goes.
OH just been diagnosed as having type 2 diabetes.
I'm looking for any suggestions for a good  old fashioned cookery book to help me out. We are very boring and eat old fashioned meat, potatoes and veg type meals... he has a huge appetite..
Obviously I will ask nurse for advice but earliest appointment is 2 months away...
Doctor suggested low GI diet...it's all yo new to me. I've spent hours online... but I just work better with a good old book🤭.

The Hairy Bikers have a diabetic cookbook. I cannot find any diabetes cookbooks that have more simple foods. Hopefully somebody else will know one.

I was diagnosed as pre-diabetic and have controlled and reversed it by following a low carb diet.  A cook book which I found helpful was The Diabetes Weight Loss Cookbook by Katie and Giancarlo Caldesi.  If you like meat, potatoes and veg type meals just cut out the potatoes and have loads more veg.  Roasted or mashed cauliflower instead of potatoes.  Dr Michael Mosley’s 8 week blood sugar diet book  is also really helpful.
