Final question....does anyone else not feel hungry when they should and then ravenous when they should be tucked up and asleep in bed.  I know this might not be a menopause symptom, but thought I'd ask, as it's come along with everything else.

I am eating oatmeal now to try and stop the hunger as it's nearly 3am and I wanted to go to bed a while ago, but if I go hungry I will wake with heart skips, etc.  Earlier I couldn't eat.

It's not just hunger, it's my whole system keyed up and then after I've eaten, my system calms down.  All very odd when I should be asleep, lol

No I'm not, perhaps this issue is linked to my thyroid issues.  I have underactive thyroid.  I find I have periods where I'm not hungry and then real surges of hunger and if I don't eat then (ie delay eating even just a short while) I get the palpitations and skipped heartbeats.

Maybe make a note about EVERYTHING that you eat/drink in any 24 hours ?  For years I had 1/2 slices of white toast with butter or marmalade but by 9.30 I would be hungry so I swapped to a good muesli-type cereal - which can be eaten dry or with milk.  That seems to be longer lasting.

Think about slow release foods for mid-afternoon? bananas; mixed dried fruits and nuts to nibble; ReadyBrek was useful; Marmite on toast.  I have been bloated lately so have found eating hard work! but like you, by 11.30 p.m., my body is hungry  ::)

Are you taking medication for your thyroid condition? Might this explain the variation in your appetite?
