hi all does anyone make carrot cake ? i made one this afternoon from a recipe off the internet and it was well sort of too wet more like a pudding, a bit disappointed but i will have another go if anyone knows a good recipe
took me ages to grate all the carrots my arm went stiff ;D

Sounds like yr carrots may be too juicy!
Try squeezing out some of the liquid from the grated carrots with a kitchen towel.
This is a nice recipe, though I leave the walnuts out as I don't like them.

jedigirl, thanks for that, i did think when i had grated the carrots how juicy they were, in fact i had to eat a little bit of it ;D but the recipe never mentioned anything about that but i will have a look at the link you gave, have you tried it yourself ?

not really but its too wet more like a pudding ;D not what i was expecting not sure if the birds will eat it, may stick there beaks together

My mother has been known to slice up failed cake and bake it in custard. It sort of works as a pudding. ;D

The Indian carrot cake receipe we used to have was boiled in milk for hours with grated carrot - then condensed milk added.
