anyone bake their own bread ? if so do you have a bread maker or the oven kerrie

Hubby bakes all our bread, we have a panasonic bread maker. He uses Australian mixed grain flour or a mixture of brown and seeded flour. The bread doesn't keep as long as shop bought but of course it has no preservatives in, it doesn't last long enough to go off though usually!

i made 2 loaves a couple of weeks ago it was nice but the centre bar was stuck in the bread both times i have checked the instructions and it just tells you to leave it to cool and then pull it out but it leaves a hole in the bread thats why i wondered if i might be better trying a loaf in the oven kerrie

That happens sometimes with a bread machine. I'm too lazy to bake by hand, but using a bread machine is easy.

I always use the oven. Part of the enjoyment is kneading the dough. I can really recommend it if you are feeling frustrated or angry - very therapeutic to pummel a lump of dough :)

If you oil the paddle it helps.
Haven't used my bread maker for ages....it's in the garage.
Quite fancy trying sour dough bread though.

I handmade my own bread - tastes so much better than anything you can buy in the supermarkets.

Nope. DH does, he always makes it by hand, proves in the airing-cupboard or in the sunny car, then cooks in the oven.

Oiling the paddle is a good tip. Thanks! I make loaves for DH and make spelt and rye flour loaves for myself. I don't tolerate normal wheat flours, but this loaf is nice. Tried rye only bread and it was disgusting. I have to make a tomato and olive loaf if we have a family gathering, by popular demand.

I was given my old next door neighbours bread making machine when she died. She had often made me loaves from it and I was pleased to have it. But I had the same problem with the paddle getting stuck and it would leave a huge hole in the loaf when I finally prised it out. Oiling it helped a bit but I found it was easier to get out if I left it to cool a good while before trying.

not sure what to do, if i attempt making it in the oven does anyone have a recipe for simple white loaf, i think whats putting me off is knowing how long to knead and also is it proving :-\ sorry to sound dim but its something ive never tried and it sounds complicated kerrie

I'm sure there are plenty of simple recipes on the internet - it's really very easy. You just chuck all the ingredients in (warm water not too hot). I use easyblend yeast and stir it all up until you have an elastic dough (have some flour ready as it can stick to your hands!). If you have a food mixer this but is easier. Then give it a good old beat about/knead/pummel for as long as you like. The amount of time isn't really crucial but the longer the better. When I made it by hand ( haven't done for a long time) I would then just lightly oil the top of the dough, put it in a bowl and cover with a cloth somewhere warm until it had risen - again the time isn't crucial but give it a while until it's about doubled in size. Then beat it all down again and knead for a bit, then shape and put into tins or on a sheet. Cover with cloth again - leave it to rise until about double - this bit is more important ie not to let it over rise - then into the oven and cook at whatever temp - usually quite hot. When it's cooked if you tap the bottom of the loaf it should sound hollow otherwise it's not cooked in the middle. Sometimes turn the loaf while cooking depending on your oven.
So it's:
Mix
Knead
Prove
Knead
Prove/rise
Cook
If you're in a hurry you can skip the first prove and just mix it, knead and then put into tins straight away but the bread won't be as good.
We made bread by hand for years and years and then stopped, not sure why - too many children I think so couldn't keep up! My husband bought me a bread-maker for a very belated (6 months!) birthday present last autumn - but he now likes to make all the bread in it - he's always done it before I've even thought about it, but then he eats more than I do!
Our paddle usually gets stuck too - but you can use a cocktail stick to find where it's stuck and then lift it out while bread is hot and then the loaf sticks itself back together again. When I do it I always oil the paddle but my husband never does - he says it doesn't make any difference - men ::)

I bake mine at 230 degrees for 15 minutes and then down to 200 for another 15-20. Kneading is really up to you - I've been making bread for years now, and I know by the texture when I have kneaded enough - I like quite a dense loaf so only knead for a few minutes.
My basic recipe is 1.5lb flour, 1 sachet yeast, 1 tsp sugar, 2 tsp salt and 3/4 pint warm water. I never make a 100% white loaf (my 'white' loaf usually has 4 oz of wholemeal flour), but adjust the white/wholemeal depending on what I want. Sometimes I chuck in some herbs, olives, nuts, seeds, sundried tomatoes...whatever I feel like.
Go ahead and experiment - flour is cheap and whatever you end up with, it's usually edible, even if it doesn't always turn out the way you want it to!

i made a white loaf in the bread maker 3 hours it took but its lovely, crusty and really soft inside, very pleased, doesnt take alot :) now iam wondering if anyone has made cake in their machine ?

Nope - apparently dishwashers can be used to cook with ….. if you do a GOOGLE ;)

My sister enrolled her hubby on a day's bread-making course for his birthday last year. Now she comes home to freshly-baked artisan bread!

must admit i love the tiger loaf which is baked in store at a.da and its only 5 mins down the road :)

Tiger loaf is a fun name for bread. I had never heard of it until we bought some at Tesco while in the UK. It was good :)
I use a Kitchen Aid mixer with dough hook to do the kneading when I make bread. Haven't made a loaf in a while, but yesterday I did make some hot cross buns to take to a meeting. They were delicious.

Put some bread on overnight. Oh dear, I think I must have forgotten to add water! It looks like a crumbling volcano crater in the bread machine.

We Make our own bread and had the same problem with the paddles. We came up with an idea to solve this problem! When your programme has kneaded for the last time we pull the paddles out, you only end up with small holes this way. ;)
