I have some madagascan vanilla pods that I have to use up. Trouble is, everything I can find to make with them is so fattening. Double cream etc. I thought of creme brulee or cheesecake but is there any way to make either of them taste nice without all the full fat cream?
Anyone got any brilliant ideas for a more healthy but great tasting pudding with vanilla? (or recipe with vanilla). I am going to cook with a friend and she doesn't want to make icecream.
I'd fancy yoghurt but don't have a yoghurt maker. I can't eat wheat and don't fancy GF crusts as GF biccies are choc/ginger/too sweet or oatcakes. Help! Thanks x

You can put them in yogurt or creme fresh. Or even low fat cream cheese to make a cheese cake.
It's a bit of a luxury item so go for it and enjoy. It's not as if you eat this kind of thing every day.

I used vanilla essence in Junket when i used to make it could you use pods scraped instead ? Uses milk not cream.
not bought rennet for a while but it may be in major supermarkets still.

Vanilla rarely goes off. Add them to pancake mix? DH cooks his morning porridge then cuts the pods up in small pieces. A friend works for a herb company and gets samples - by the 1,000 :-*
Added to ice-cream or yoghurt.

thanks for the ideas! Def look at low fat cream fraiche or cream cheese if I can find a suitable gluten free biscuit for the cheesecake base.
Trying to think of a neutral GF biscuit as ginger will be too strong and oatcake will fall to bits under the cheesecake (?). I'm a novice (you'll have noticed that ;D) at baking

Choose the biscuits that you usually eat and put 2 layers down as a base. It's going to crack when cut anyway ;)

Just a small tip, oldsheep, when you've scraped the vanilla pods out, don't throw them away, put them in a jar of caster sugar. They will permeate through and you will have delicious vanilla sugar! :)

thanks for the sugar tip! And all the suggestions. I def plan to keep some for yoghurt, although what I fancy is frozen fat free yoghurt next summer. I love frozen yoghurt and the shop ones are dull and too sweet.
Neighbour is a good cook (she's supervising; I'm clueless at baking). She says creme brulee and meringues with the egg whites.
I'm going to hers on friday afternoon. Morning I have a DEXA scan so this will be much needed dairy, won't it ladies? (no need to comment if you disagree ;D)
