Is anyone else fed up with thinking what everyone is going to eat for the evening meal?
Plus I'm bored with walking around the supermarket trying to think of new ideas.
Thought if we share what we are having it might bring new ideas or revive a meal we haven't made for a while.
So tonight I'm making sausage, mash, peas & onion gravy. Clotted cream rice pud for sweet (tescos not home made ;D)

Nowt yet. Had a peppered beef salad at 12.30 then a whole chunky fruit scone with jam and cream at 2.50 p.m. stuffed ;D. there is a repeat of lunch in the fridge, or bananas or ......... the 1st 2 evenings of the week are rushed due to having to be out of the house by 5.30 as you can see I didn't go tonight. Then Wed we can plan the rest of the week.

Sounds yummy San and great idea to start a post. its mind boggling trying to come up with something all the time. :o Tonight I'm doing meatballs and penne pasta, garlic bread not a big stretch but we're all glued to the Olympics so not standing in the kitchen for hours >:(

We don't have a pudding ever night. The rice pud was for yesterday but we couldn't manage it after lunch.

Himself is good at:
chicken curry with either rice or Naan bread
Naan bread with tomatoe paste, cheese, other veg of choice - each layer is melted under the grill and another put on top until .......
Bacon and eggs
Pasta dishes
if it were left to me ::)

I wasn't sure what to start for dinner tonite (online shopping arrives tomorrow morning!) until I read Annia's post and remembered I have meatballs in my fridge! I will put them with M&S tomato and Basil Sauce and whole wheat spaghetti.
Dessert? Hmmmm! Perhaps a slice of Vienetta from the freezer!

Homemade salmon fishcakes (from the freezer) new pots and frozen peas. We never have dessert "then and there" but will probably have a mini Magnum later. We eat little and often rather than big meals but no doubt get through just as much!
I was working this afternoon so we had an early lunch of scrambled eggs on toast. When I got home, OH suggested getting fish and chips but I decided that as we'll be having plenty of that sort of thing when we're away, I'd make the effort to produce something slightly healthier. ;D

Oh god dinner was so stressful tonight. I had decided on an over ambitious dinner but didn't have much time. I had some chicken strips so thought I would stir fry them with veggies, make a cheese sauce and put them in home made pancakes - god it took forever to do and all I could see was the minutes ticking by - they tasted delicious but you should have seen the pots and pans at the end of the meal - thank god hubby does the dishes. Never again will I cook something like that in a short space of time - should have gone to the chippie!!! Xxx

That's reminded me that I used to make fish goujons (using cheap "uneven sized" strips of pollack from Painsburys.) I've also got a stash of chicken goujons in the freezer from when I found some reduced organic skinless chicken thighs on sale. They feel "naughty" but are relatively healthy, I think. ;)

Myself, husband and son rarely eat the same thing so tonight it was:-
Me. Roasted Lemon and Parsley salmon fillet with broccoli and carrots followed by a WW Chocolate Eclair (I LOVE them)
Hubby. Liver, mashed potatoes and cabbage followed by Bakewell Tart
Son. Homemade Steak and Guinness pie with Skin On Chips and 2 Auntie Bessie Yorkshire Puds followed by helping of ChokaBlok ice cream

Tonight however we all had the same.
Prawns with mango and avocado salad with cherry tomatoes, lettuce and an olive oil and chilli dressing. Then some cheese and biscuits. I did make some homemade soup today. I was given an enormous marrow from someone at our community garden. The soup turned out really nice although I have gallons of it. It will freeze well and will be nice for lunches.

I often cook two or three different things, not due to having a veggie in the family just differing tastes.
I have to say I dont struggle with it but then again I used to cook for a living so two or three different things is a doddle :) Try 100 for lunch......now that is a challenge.

Yep me too Mrs P.
Its been about five years since I did any catering jobs and I really dont miss it. Its a young persons job and although I dont consider myself old I know my limitations.
I have even stopped doing family stuff as it was too easy for them to assume I loved it......um no ;D
I do enjoy trying new things for the family and ideas from this topic will be great.

Try 100 for lunch......now that is a challenge.
Nightmare :P I sometimes cook 2 different meals as OH doesn't like some of the food I do. Or I opt for a ready meal. I've gotten lazy since its become just us two. I would like to get back to home cooking and make it a bit more healthy than it has been.
All your posts ar giving me ideas. Thanks ladies :D

We always eat the same at main meals apart from the fact that he has "normal" pasta and I have wholewheat. He doesn't like onions (although eats it in my mince!) so I have all the onions in casseroles etc. When I'm on my own, I'll cook things like sweet and sour veggies or prawns, which he doesn't like. When he's on his own, he heats up freezer meals I've made for him! ::)

well that's 3 meals for a start! ::) I succumbed to a 2nd salad this evening followed by a lemon yoghurty thing - stuffed again :D

Yes Mrs P, I always cook something different for each of us except Saturday (takeaway) and Sunday teatime when our son goes out for a meal with mates and then we just have sausage roll, chips and baked beans (well, I have beans, he doesn't!)
My husband hates anything that has the slightest hint of flavour ::) He hates onions, garlic, spicy food and oh, well just about everything really! He only likes very plain food and I've had to tell him off sometimes when I've been happily cooking something tasty for myself he comes in and says "Ugh, what's that horrible smell". And I say, "Thank you darling, that's my tea that I've been looking forward to"
I suppose I do it because I want them to have what they enjoy. I just wish they would enjoy the same food as me ;D

Ariadne my OH is exactly the same. Plan food no sauces and minimal range of veg.

It's easy for us as we both like plain food! Mind you, I'm sure that he'd eat less veg if I didn't just put it in front of him. ::)

Whereas we add ginger and garlic to mostly everything I say 'we' Himself is the Chef.
As a recovering anorexic I can now enjoy most of our meals. We always discuss what I 'fancy' and sometimes when he's cooking I go 'urggh' as the smell might be strong. Usually though :-* ...... I can also sit down with him if he cooks something I wouldn't touch with a barge pole, rather than staying out of the way.
If we go out to eat I choose something he wouldn't cook here. Some of your dishes sound delicious ;)

We usually eat the same meals, but due to having 1 chicken breast(me) and 1 pork steak(O.H.) that's what we had, with home-grown potatoes, carrots and beans and gravy, and onion rings. No sweet for us during the week.

Hubby works away all week, so it's just me and Lady P (daughter) - tonight I had to go to the next town to collect her from a friends (long story, but I was nice mummy rescuing her from a bad weekend!), so not a lot of time for messing with food after we finally got home about 8pm (I'm up for work at 5.30am, so usually in bed by 9.30pm!), so we had quesadillas from a kit - took about 20 minutes and were really tasty.

I made an easy vegetable korma tonight which consisted of, lentils, butternut squash, curry powder, tomato puree, courgettes, natural yoghurt with brown rice! (Waitrose recipes website) very good. Also a small glass of wine with it.

Salmon fillets - they're on half price at the supermarket that begins with M :bounce: :)
Will do roasted mediterranean veg with them (courgette, red onion, peppers, cherry tomatoes in olive oil with italian mixed herbs). Son no2 is going to need some pasta or rice as well to bulk it up because he has an enormous appetite ::)
Hubby doesn't like salmon so he's getting his own.

Well tonight it's going to be Corned Beef Hash, on top of fried onions. Cheap and cheerful in our house tonight. ;D Well we were out for tea last night at a Brazilian restaurant. ;D

Tonight I am making a mid-week roast with my son who has just moved out but not too far away. It's the first ime he will have done a roast using his electric oven. We have gas here. So chicken, pigs in blankets, roast potatoes scored and done in olive oil with rosemary & carrots, green beans & parsnips. Also stuffing balls and apple sauce. Sounds like Christmas!! Actually if it goes well- I may be suggesting we go to him for Christmas this year!!!!

mmmm.. I had forgotten all about corned beef hash! loved it with baked beans!!
The grandchildren are coming today so we are having fresh meatballs with tomato and basil sauce and pasta swirls. With home made rocky road for pudding (them, not me sadly!)

PN our two hated it, so it's only since they've both moved out that we started eating it again. When DD, partner & DGD were here in May I served it up to DGD, she'd never had it before as her mum refuses to make it, and she gobbled it up, cleanest plate ever! ;)

I'm out tonight so for quickness we will have chicken breast in breadcrumbs, rice with peas and sweet chilli sauce on the side.

Tonight I want to have a go at a recipe from the Gok Wan cookbook that I got fro my birthday last week :)
Daughter is away camping and OH will eat owt. . . .so great time to have an experiment or two ;)
But first. . . . I need to go purchase a wok!

I have this habit of eating the same thing every evening till i'm sick of it and then i go onto something else. At the moment its minced pork which i fry of then add garlic, 2 tins of toms, mushrooms, kidney beans and then have rice with it. i make a large pan of it and then will eat it for 3 nights and then start again. Having said that though tonight i am having chicken in breadcrumbs and new potatoes and cauliflower cheese tomorr will start with the mince. I always have a pudding. At the moment i have a peach crumble on the go tonights the last night of that.

Mmm, my dad made a fab corned beef hash.
I've got a party to go to in a couple of weeks and my dress is a bit tight, so I'm trying to be good. I'm having salmon with lemon and parsley, salad & a couple of new potatoes from the garden. OH and son will have spag bol and salad, followed by left over cheesecake.

Beginning to think I'm the only person in the world that doesn't do pudding! Even when we go out for a meal I would rather have a starter than a pudding (very rarely have 3 courses). Just occasionally there'll be something on a pudding menu that Lady P and I both fancy, then we share!

We only have pudding on Sundays, unless it's leftovers. Fruit(me) & yogurts(OH & Son) the rest of the week.

If we have a very light meal like salad or fish we may have a dessert but otherwise I am usually too full! It is nice having an ice cream or fruit or something though.
I always remember on Eastenders Robbie looked all suspicious when Bianca (or one of his others can't remember which!) gave him dessert and he exclaimed "a two course meal?!!! What are you after?!!!"
Every time I give DH a dessert he does the same!!! But adds "whatever it is you're after - you've got it!!!!!"
The best way is definitely through their stomachs!!!!!!

I think your right Susan. I also grew up having 'afters' every night. It was usually tinned fruit with carnation milk, rice pudding or swiss roll and custard. We never had biscuits etc, unless it was for special occasions.

We rarely have a pudding now. Even on a Sunday if we do then it will be a iceream of some kind or, I have a fancy for something (like the rice pudding last night).
When DD was small I would make pudding but then I was home all day so had the time. Rice pudding, apple pie, crumbles ....
Dinner when I was small always involved a pudding. I loved my Nan's crumbles and pies. She would often give my mum one for us to take home :D

He's had a cookery prog on tv for a while now, though I never watched it, maybe it's finished.
As for puds I used to always make a pudding every night. But gave up to try and lose some weight, didn't work. Though I do still make an effort at the weekend. Crumbles, steamed puds etc especially in the winter.

Sausage rolls chips and beans tonight. I cant remember the last time we had this ;D Cheap and cheerful but tasty.
We hardly ever have pudding. OH is diabetic and I try and watch my weight.

I had a sort of pitta bread wrap thingy for lunch with cheese and ham inside ........ the wrap tasted of nowt ::)

We always have a dessert - I feel cheated if I don't have one. I do try to make mine something not too high in calories though. I have a sweet tooth and would rather have the dessert than the first course. We always had a dessert when I was young and I too remember having tinned fruit cocktail with evaporated milk or swiss roll and custard.
Once when I was trying to lose a stone, we went out for a meal and there was nothing light on the sweet menu so I had a starter dish for my dessert!
Tonight it went like this:
Me: Weightwatchers Beef Hotpot with broccoli, carrots and one Yorkshire pud followed by my favourite WW Chocolate Eclair.
Hubby: Cumberland sausage, fried egg and chips followed by Bakewell Sponge (he had that last night I hear you say.... but no, this is a different type of Bakewell Tart so there!)
Son: Quiche Lorraine, salad and a few chips followed by different flavour ChokaBlok ice cream to last night.
My son has fads on certain foods and eats them day after day until he's sick of them

Roasted vegetables with fresh rosemary from the garden; potato, squash, baby tomatoes, parsnip, onion, carrots, courgettes. Hubby also had a steamed steak & kidney pudding with it.

Nipped to the chippy this evening. Tomorrow we need to pick runners and peas from the garden and Himself plans to stir fry some chicken breasts with garlic and ginger, the fresh veg. will be cooked gently and served on the side with butter and black pepper .........

PN how do you cook squash ? I've often looked at it in the shop but haven't got a clue where to start. What does it taste like?

Real problem trying to think of what to eat these days. I think we must eat the same 10 meals over and over again.
Because of the heat at the moment it has to be quick, light and involve all the garden veggies.
My favourite is tomato, onion, green pepper and rocket salad (made and kept in the fridge for an hour) with boiled basmati rice (warm). It's really easy to make and eat. Sometimes make it with pasta for a change. However, it's wearing a bit thin now.
I'm quite jealous of the UK choice of supermarket ready-made meals. We don't get them here.

Yep, all these are good! I also love it peeled, roughly cubed and roasted with baby tomatoes and rosemary, drizzled with olive oil. Mmm

Going to have to try that one PN. Himself likes a similar one I buy frozen, which also has aubergine and courgettes so maybe I could add those into the mix. Thanks for that suggestion.

Ended up doing my midweek roast last night so- having cut all the leftover meat veg stuffing sausages ect into bit sized chunks and covered in gravy, I have topped with short crust pastry and we are having Roast Dinner Pie tonight!!! A yummy idea that was passed on by my son's mates mum and we love them! I particularly love the fact there is so much less washing up as all the hard work was done yesterday!

We had spaghetti bolognaise, followed by home made coffee cake & custard.

I made some marrow soup with a marrow I was given. We did have some of it roasted with red onions cherry tomatoes and peppers. The rest was made into a lovely creamy soup.
Tonight because it is really warm here :o it was ham and cheese salad with new potato salad and coleslaw. Going to have a chocolate lolly soon. Its sort of a mini magnum but Morrisons own. Half the price and just as good. Oh and a glass of red wine.

Chicken casserole with fresh veg and herbs. Cooked in my old schlematoff (wrong spelling!!) which I have had for 30 years now. Anyone remember them? Brown clay type dish with lid that you soak in water for half hour and start cooking in a cold oven. Makes fantastic meals

Rare family get together meal today! We provided the pizzas DS & DinL brought yummy salads and another DS homemade carrot cake with orange icing that he declared a disaster but was actually amazing! Little grandson had fish fingers, beans & fries.
Now enjoying sitting with a beer while watching the closing ceremony glad of having hosted a good day with a loving family. ( well- most of the time anyway!!!)

Hmmm yes sounds a good combination. I love beef with onion and carrot- it's just made for each other! I read somewhere that the beef and carrot combination is great for absorption of the vitamins. Beef for the iron and vit C in carrots. Yummy and nutritious!

Lamb yummmmmy! I only get to eat lamb if out for a meal as hubby loathes it. Think he is actually remembering mutton stew from when he was young which was always really fatty.

Made do with rice noodles with garlic, onion and tomato sauted in oil. Quite nice - I haven't tried noodles before (at home). I was impressed because you don't have to cook them, just pour boiling water over them and leave for 3-4 minutes.

Tonight- mushroom soup, homemade bread, pork with apple jus and crushed potatoes followed by fruits of the forest brûlée.
I wish I could pretend I made any of the above but we are away for a couple of days and it was hotel food!!!!
Feeling very full now but very grateful I am not washing up all those pots and pans!

How about this CG for posh.
Tender pork loin minced and seasoned and then wrapped in a delicate butter puff pastry. Twice fried pomme frites and cannelloni beans in a delicated flavoured sun-dried tomato sauce.

I was out for lunch with friend and had a flour tortilla wrap with ham, mushroom and mozarella cheese, salad and crisps on side then a piece of chocolate tiffin for afters - very naughty but highly enjoyable. Need to stick to diet now! Making pasta with prawns, mushrooms and sauce for dins.

I know what you mean sometimes there is no time. At times like that I sometimes do fresh pasta (takes 3 mins) and open a jar of M&S pasta sauce ( lovely ). We always have this in store along with parmesan cheese. A meal in less than 5 mins!
Back home tonight so I may very well be doing the above because I haven't much in and probably won't feel like bothering much after travelling.

On Thursday, it was aubergines, tin tomatoes, garlic, onion, basil and tomato puree, with penne pasta and a bit of grated cheese on top. Last night, it was spaghetti bol. I think those quorn burgers sound great, will try them. Tonight, we are going out for a friends birthday meal, so probably seafood! ;)

My Grandpa had an allotment so we had plenty of fresh veg when young. Not the same out the supermarket or frozen. Lucky you. I'll be round soon, save me some!

We have a small raised bed in the garden and I have grown Beans and spring onions, chard and a couple of herbs but that's it. My tomatoes disappointed me again this year so I won't bother with them now!

Courgettes sound nice- I may grow those. My father in law cooks the flowers in batter!

My tomatoes are rubbish this year too. I've never had such a bad year with them. Everything else is very late. We like growing yellow courgettes, they have a better flavour. I don't put lashings of butter in the mash as I'm trying to lose weight. I just use semi-skimmed milk in mine.

Well tonight I am making pasta with mushrooms, bacon & anhovies. Yes I know that sounds weird, but it's very very tasty. Only add a couple of anchovies and it lifts the flavour.

Yes I know, anchovies :o my reaction was the same when I saw it in a recipe. I don't normally like them myself. I've used anchovy paste in a sauce once too when making vol au vents. Again it added some much needed flavour. Go on give it a try, you know you want to. ;D

Ok,ladies, for lunch I had a lovely fillet of fish in a bubbly batter, with chunky chips , home-made mushy peas and tartar sauce followed by summer fruit sundae. All very nice, but bang goes the diet.
For tea, I've just had a ham and home-grown salad sandwich.
The lunch followed a gynae appt this morning, when I had a cervical polyp removed. Nothing sinister, just routine, but regulars on this forum will know that I always get myself worked up over hospital appts.

I did a chinese stir fry in my new wok/pan thingy.
I stir fried some chicken breast strips, added a big bag of fresh peppers, onions, bean sprouts & carrots. Some mushrooms & bamboo shoots & stirred in a plum & ginger chinese sauce.
It was scrummy - trouble is it has made me extremely thirsty - why does chinese food do that.

I went to Zumba last nite and then straight on to a pub quiz with DH and DS. As it was late, I didn't want to eat much so I asked for burger from the kids menu!!!! It was just right to fill the gap!!! It was funny cos it came without salad cos little kiddies wouldn't like that!!!!!

I've had food from the kids menu before. It's great that the portion is slightly smaller so you don't feel you're being overloaded with food.

Pennyfarthing - how do you make slimming world chips?? PN
Peel potatoes, cut into chips. Preheat oven to 220C and heat roasting tin. Bring large pan of slightly salted water to boil. Drop chips in and simmer for 4 mins. No longer or they'll go mushy! Drain immediately. If you've got time, leave them for about 5 mins.
Spray your hot roasting tin with frylight . Put chips in and give them a spray too. Cook for approx 25-30 mins, giving them a shake every so often so they're evenly browned.
Serve with vinegar and S & P to taste.
We have been having these instead of shop chips or oven chips since I started at SW in mid-May and all my lot love them. Hubby and I have both lost weight ..... me - 1st 3.5 lbs and him 1st 5 lbs. :)

Thanks. Must admit that I do oven chips - thin, french fry ones - or fry wedges that I've made out of microwaved whole potatoes. I'm just trying to think of ways to cut down on the calories a bit - for the sake OH's expanding midriff and my thunder thighs! ;D

Just cleared out the frige! With our last few things(!) I will cobble together some slow roasted veg and some pasta with tomato sauce.

Chicken breast marinated in soy sauce oil and onions, put in flour on each side and fry for about 10mins each side, with rice and peas. Banana, Glass of white wine. :)

Just made cheese on toast pizzas - very nice! Toast the bread lightly on both sides, lay a slice (or two) of gouda on each slice, top with thinly sliced onion, tomato and half olives and toast until the edges of the toast blacken! Well, that's how mine was and it was quick and very tasty!

That's reminded me of a nice thing I used to make. "Good Seed Doctor" bagels (I'm sure that any bagels or bread would do but I used those as they were high fibre) toasted, then topped with beetroot pickle, sliced pear and sliced blue cheese (usually organic stilton) and toasted until the cheese melted. If I didn't have pear, I'd use tomatoes maybe with tomato pickle. Must try that again!

I had mince to make, but did not want plain mince or bolognese or chilli con carne - so made it with onion, mushrooms, a tin of tomatoes, beef stock cube and we had it with pasta. Was yummy, supped the gravy up with a spoon.

Son and I had quiche, spicy wedges, salad, carrots and green beans with some roasted courgette and red pepper
Hubby had liver, mash and cabbage. Had to run up the allotment and dig up some "mash" as I had started cooking tea then discovered no potatoes left in veg basket ::) I picked the green beans and courgette while i was up there too.

I'm off to SW tonight but have left an old family fave in the oven and I'll have mine when I get back. It's Tender Beef Casserole and is gorgeous - beef, celery, potatoes, carrots, onions, mustard, parsley, S & P, 2 tablespoons of vinegar to tenderise. Yum!

Went to friends for dinner. We all bought a dish. Main courses were lasagna and a chicken pesto dish. Had salad with it. Pudding was a raspberry cheesecake or strawberry coconut meringue.

I like something different from sandwiches. Last time we had a picnic we had homemade wraps with chicken, salad in them. Also some picnic snack eggs and pork pies. I like those ready prepared fruit boxes supermarkets do. I'm a sucker for melon ::)

Tonight we are having a roasted red pepper, red onion and bacon quiche (SW recipe), a huge salad and jacket potato.

Tonight was a meal I cobbled together from bits and pieces. Had a roast chicken last night so sliced the other half of that up. I put the carcase on to boil with an onion, carrot, bouquet garni etc to make soup.
I cut up and lightly fried some lean bacon and an onion and added a big bag of stir fry veg and rice I found in freezer. So we had that with the cold chicken and it was fine.
Then we had fresh melon.
Got to go and pick the bones out of stock now. :)

Purplenanny. If you want to try a Neep buy a whole one (sometimes supermarkets sell a half) but don't buy the ready cubed in a bag. For some reason don't taste quite the same.
Remove the tough outer layer and cut the rest into large cubes, boil in salted water till tender, drain, mash with butter and season to taste.

Tonight we are having stuffed Marrow and jacket potatoes. I do a lovely spicy variation and it is DIVINE! Minced beef or lamb, rice, onion, garlic, ginger, chilli, turmeric, coriander, tomatoes, raisins, parsley etc. It's a very economical meal too - the marrow cost 40p and it's a big one.

Well Bette, fruit pudding looks like black pudding but is white with fruit in it.
It's made from flour, suet, brown sugar, currants, sultanas and sometimes a wee bit of cinnamon in it. It's made into a sausage shape, sliced and fried ( though I sometimes grill it to kid myself on its healthier)
It's a traditional Scottish dish.
I love it but sometimes substitute it with a bit of fried Clootie Dumpling which is another traditional fruit pudding. My Gran used to make them by putting the mixture (which had sixpence coins in it ) into a muslin cloth and boiled in a large pot. The smell was heavenly and if you got a slice with a coin in it then you were over the moon.

I know - it's crazy isn't it? I was always of the opinion "eat it or go hungry" but the reality is different. I'm told my husband was a very fussy eater as a child and is getting steadily worse. He hates vegetables and anything with the slightest hint of a flavour and just lately, he's even going off sausages which were always his favourite thing!
The list of things I can give him to eat is getting very small. His favourite meal is breakfast - toast, jam and cornflakes (separately of course ::))
Truth is, for some reason food frightens him. He doesn't look forward to meals like I do. He worries about eating out too. He's not a thin chap but what he does eat is not particularly nutritious.

We're having jacket spuds, low fat sausages and a vegetable fricasee -which I better get my finger out and start making soon.
We don't do fussy eaters in our house - never have. DH will eat anything except cucumber, parnips and swede. Daughter doesn't like baked beans. Son (who no longer lives at home) used to be quite fussy but now eats anything I put in front of him when he visits.
I will never cook separate meals for people. Since mine were babies I cook a meal and if there's something they don't like then they just eat everything else. They eat it or go without ... no alternatives. What a cruel mother I am. ;D ;D

I get really yummy sausages from a butcher who specialises in them and buy lots as once (as he's not local) and freeze them. OH only likes the plain, thin ones; I like them too so we have them when eating together. However, I always buy a selection of others to have when I'm eating alone; last time I got turkey and cranberry, pork and apple, pork and rhubarb. Always get the duck ones! :P He does lots of spicier ones too but I don't like spicy food.

We have a local butcher that has competitions in coming up with a new sausage recipe.
He has made all sorts including gin and cranberry and also an iron bru one.
I have never tasted the iron Bru sausages as I just dont fancy it but the gin one was lovely.

Ooh, stovies. Not had that for years. My gran used to make me stovies but with left over lamb from a Sunday dinner. Lamb a bit too expensive for stovies now. You barely get enough to feed a bird for a tenner.
Never had it with corned beef but might give it a go.

Yep Anne, think lamb is the proper old fashioned way to make them - but I use wee willie winkies or skinless sausages and corned beef with a couple of slices on side of plate. Yum, off to make them now.

I had spam tonight, chopped up in squares, and fried with onion, garlic, tinned tomatoes, baked beans, kidney beans and some chilli powder. All this with a jacket potato. Probably not very healthy, but indeed very tasty and comforting on a cold miserable November eve! :)

Defrosted some prawns for lunch planning to do them with sweet and sour veggies and brown rice but got immersed in admin and realised that I was too hungry to wait for that so cooked some tagliatelle, defrosted some home-made tomato pasta sauce and added some frozen peas and the prawns.

The Pakistani authorities only give permission for a certain amount of mangoes from Pakistan to be exported each year as it is such a staple food for the country. They are known to be the best in flavour and texture.

Thursday is payday so we're eating very frugally at the moment. Had friends over for dinner Friday night and I cooked WAY too much rice (as always!) and dhal so I bagged the excess and froze it. Yesterday we had fried rice with vegetables and homemade quiche. Tonight I made arancini, mixing some of the rice with the last of the dhal and some mozzarella and a beaten egg, shaping it into balls and baking it in the oven - it was gorgeous!

Pakistani mangoes only grow for a very short season. We have bought some from India and the Pakistan border today off the 'usual' fruit stall, it is unlikely that supermarkets have access to these as they are imported under licence. Even though we only go to this particular fruit and veg. stall at this time of year, the Indonesian owners recognise us .......... they are sweeter, juicer and better than those mangoes sold in supermarkets, mainly because they are imported fresh - whereas most fruits have been in cold storage before getting to the stores.

I scored a bargain in Sainsbury after work today - a ready to roast turkey breast joint reduced from £5.50 to £1.89!! It was delicious! I made black pepper potato and butternut squash wedges with it, carrots and green beans but totally forgot to make any gravy, so I had to have LOADS of apple sauce with it! My partner works evenings so he'll have his when he gets home - and keep some for sandwiches for tomorrow.

We tried this last week - from the Good Food website. It was quick to prepare and then you just put it in the oven and leave it alone - I like that!
125g ball mozzarella , torn into small pieces
50g strong cheddar , grated
1 tbsp wholegrain mustard
4 skinless boneless chicken breast fillets
8 smoked streaky bacon rashers
Heat oven to 200C/fan 180C/gas 6. Mix the cheeses and mustard together. Cut a slit into the side of each chicken breast, then stuff with the mustard mixture. Wrap each stuffed chicken breast with 2 bacon rashers - not too tightly, but enough to hold the chicken together. Season, place on a baking sheet and roast for 20-25 mins.
Veggie version: Cheesy baked mushrooms: Heat oven to 180C/fan 160C/gas 4. Mix the mozzarella and cheddar with 1 tbsp pesto, then spoon into the hollows of 4 portobello mushrooms. Place on a baking tray and roast for 15 mins or until the mushrooms are softened and the cheese is bubbling.

Last night we had tapas - I'd bought a Groupon voucher (I LOVE Groupons!!) for 6 tapas dishes between us, and as my partner has a huge appetite (but is skinny as a rake!) we ordered a couple more. Delicious food, but very rich. We also shared a bottle of wine as they had one of those offers where you buy two large glasses and get the rest of the bottle free. We didn't finish it though and asked for the screw top to bring it home. Unfortunately I had to go meet my ex-husband straight after to discuss the (lack of) house sale, half a bottle of red probably wasn't the best idea! My partner works evenings at the moment, Tuesday-Friday, and the Groupon wasn't valid for weekends - we don't usually eat out with wine on a Monday!!

Last night it was left over cold roast beef (from Sun) homemade red cabbage with apples and my own chips (SW variety). We then had stewed rhubarb and low fat custard.
Tonight it's going to be sausages, because I've just taken them out of freezer and I'll go from there. :)

hope i am not out of order posting on this link, maybe its run its course, but tonight i did crispy chicken breasts with mushy peas and oven chips, now neither of us like oven chips but as other half has recently been told he has diabetes we are trying to eat healthier soo does anyone have ideas of healthier chips if there is such a thing as he doesnt want to give up everything he enjoys :(

We don't eat a lot of chips. I like to do wedges. Heat a very little olive or rapeseed oil in an oven tray and put it in to heat. Cut large potatoes into wedges and put into the very hot oil. Scatter some sea salt or paprika over and bake until crispy and golden.
As you know my hubby is diabetic too.
It's a bit of a challenge to start with but become a way of life. I really don't think our diet has suffered and we all eat the same things.

My hubby eats a lot of fruit. Naturally sweet so it fills the gap that a pudding did. Bananas are great. Slow release and good for you. Also porridge for breakfast. Brown bread not white. Salads are difficult at this time of year but there are lots of winter veggies.
Has your hubby got a bit of weight to loose ?

I chop Mediterranean vegetables with potatoes, add tomatoes paste, olive oil , a little balsamic vinegar sometimes some Pesto and roast in the oven until crisp, really good to eat as a main dish with chunky bread or added to some protein.
Other times I blend the roasted vegies and make a sort of pate and store in large jar in the fridge, its great as a topping on fish or chicken, or on toast.

Atkins Diabetes Revolution: Control Your Carbs to Prevent and Manage Type 2 Diabetes (Based on the Medical Practice of Dr. Robert C. Atkins) [Paperback]
You can get it on amazon for pennies.
I followed revised Atkins diet about nine years ago, lost weight and never felt better , and lost my taste for sweet food, contrary to popular belief he did not advocate not eating fruit or vegetables.
I fell by the wayside when OH moved in to live with me, he has a very sweet tooth and loves carbs, though will never touch white bread. I put the weight back on :(
I have all his books and the one on vitamins, minerals and other supplements is one of the best ever written I think.
Recently there has been a reversed thinking on saturated fats by the medical profession and I often think about Dr Atkins.
Here is Dr Atkins other book I mentioned it may not be of use to you kerrie but I though others might have an interest.

Chicken, fish, lean meat and vegetables. Grill don't fry. Don't use butter. Cook with rapeseed oil or olive oil. Fruit, he can eat a little dried fruit. Nuts in moderation.
Low fat crisps on occasions.
Proper high cocoa solids chocolate but just a couple of squares.
If that does not work then eat what you normally eat only less. Smaller plates may help with this.
If he does not like brown bread then try the 50/50 loaf to start with.
I am sure you will get there.

You can do a sauce with fish to liven it up a bit. The one with the mediterranean vegetables that SL makes would be nice, or even a parsley sauce.
Just because you are going for the healthy options does not mean it has to be taste free.
I like tuna steaks with a tomato, onion capers and black olives sauce. It's really easy and so tasty. Fresh tuna is a bit taste free but very good for you.

It's been a birthday dinner here for my youngest so she got to choose her favourites.
We had prawn cocktail, steak with peppercorn sauce, saute potatoes and asparagus. Cheese board and then if we were not full enough a giant cupcake birthday cake.
We then giggled and argued our way through a game of Trivial Pursuits.

Has very little yesterday to eat as neither of us were hungry and I seem to have gone off sweet food again, so just had small pumpkin tart topped with goat cheese.
Today going out to lunch, and I still don't feel hungry!
OH is happy as this year I thought I would be a kind "treater" for Halloween and bought toffee apples. chocolate eye balls and star shaped iced gingerbread biscuits to put in a large dish, guess what it poured with rain all evening and no one knocked at the door, so OH has been dipping in ::) he says they won't keep till next year, I said why not ;D

Mu husband cooked ( he does a lot of the cooking as I work and he is retired!!) - delicious dahl (with fresh coriander), and chicken curry - (with left-over from roast chicken last night as eldest son was staying for w/e) and cool cucumber raita. Yum. He had naan with his but I had nothing as trying (unsuccessfully!) to shed a few pounds!!!

Hubby has done Sunday dinner for nearly 30 years. I used to work every Sunday so he started then and its carried on. He does make me laugh a bit though as his style of cooking is so different from mine. Every thing is done by the clock and timed to the last second.
God help anyone who gets between him and his gravy ;D.
We have all learned to keep out of the kitchen when the maestro is at work ;D

Indian Curry is always made with fresh meat, never left-overs, that's a very British thing to do …… nor do the Indians eat left over curry though we love it cold, it takes up more of the spices and tastes lovely the next day. DH makes dahl and sometimes a raita which is cooling to the palate, he also makes lots so there is 'left overs'. Indian food is usually served at the same time, never in courses; some of the raitas etc. are for cleansing the mouth between dishes.

Home made soup
Pot herbs from the market ( this is what they call in the north small cut up winter vegies that you scoop out and put in bag however much you want, the stall lady then asks you if you want peas and rosemary added)
I roasted them in the oven with olive oil then transfer to a pan, add stock, water and powdered coconut powder (I get it from Asian Grocery) bring to the boil and then simmer for 5mins.
Its good with chunky bread.

I had never had cauliflower cheese as part of a main meal until I met DH. His Mum used to to it whereas in our family, it was the main meal. Never with anything else except maybe a chunk of crusty bread to mop up the cheese.

Too much choice HB, or did you not buy the right stuff? I've, on occasion, spent a fortune at the supermarket only to find nothing took my fancy for cooking.
Ooh fondue. Yummy. Only time I've had fondue was in Chamonix & it was so good! Pity I have lactose intolerance now.

Again cockles are a separate meal in our house. Our family used to cook them in boiling water, served hot in their shells with lots of bread and butter. Grandma used the shells up the path.
DH's family would boil them up, cool them and store in vinegar, draining them ready to eat. With lots of bread and butter. I love cold cockles with cooked bacon or drained cockles on hot toast for breakfast

Ooh sounds lovely HB. I'm making lemon chicken with rice. Pudding is leftovers of last night's pud, which is stewed apples with cornflakes. Hubby gets to have cream with his.

Terriyaki salmon here (with toasted sesame seeds and garlic). The recipe was found online but could easily be Slimming World or Weight Watchers F&H as it's back to basic ingredients. Unfortunately the banoffee pie waiting for dessert isn't quite so pious, but then if someone else bought it the calories don't count do they? ;)

about to start it hb the recipe is on the itv website its phil vickery after dipping the chicken in flour and eggs you fry in shallow oil till its browns then bake for around 40 mins on a wire rack so the oil drips off :-\ kerrie

I saw someone on the TV recently marinating chicken in buttermilk over night before cooking. It seemingly keeps the chicken really moist and tasty.....anyone tried it.
I always oven bake chicken portions. I spray them with oil that I put in a little bottle and then pop them in the oven. I think it's a healthy way to do them.

tonight i am doing braising steak in the oven with a tin of chopped tomatoes , worcestershire sauce, paprika, salt and pepper left in the oven for a few hours on low served with veg, lovely havent had this in ages keep trying to vary our meals as i get fed up with having the same things kerrie

Am doing something similar to you kerrieann, a Hungarian goulash. It's in the slow cooker now and smelling very good already. Will serve the traditional way with noodles (or in this case tagliatelle).

oh i love hungarian goulash but when ive made my own it never has that rich spicy taste and colour, i wonder if its the paprika i use as you can get different strengths what do use or do you get a ready mix ? kerrie

I'm cooking for 4 adults so I increased the quantities of everything, but especially the paprika (I use Barts). I added 3 teaspoonful. Also added 3 cloves of crushed garlic.
Just put it in the slow cooker and let it be.

I normally use it when I'm making scones, you get it in the supermarket next to the cream and creme freshe.
It's supposed to tenderise the chicken and make it very moist. I must look for a recipe.

Condensed milk is: condensed milk :-* ……….. never goes off in the tin. Our kittens loved it ::)
DH is chopping: ginger, garlic, mixed peppers; frying it in a low pain in oil; will de-frost and warm through Naan bread, pile on the veg mix, layer it with cheese; put under grill until melted - serve ;)

i had a disaster tonight, the jackets were done before the chicken had crisped up, so the jackets had a soft skin :( we like ours crispy, oh well may have some tinned fruit and cream later or even cheese and biscuits

Slightly spiced salmon tonight with rice and veg. Just been in France and Spain - why can't we get fresh hake here? It's often caught here and exported to them!
It's much nicer than the South African version which is called stockfish and is a bit more chewy, often frozen...cats have been known to get it sometimes!

I was home alone last night, so I tried 'cauliflower rice' (cauli blitzed up small like cous-cous and cooked in the microwave, then used as you would rice) - YUMMY!!! And as I'm doing Weight Watchers, zero points!! I had a big bowl of beef stroganoff with 'rice' for only 8 points. Just need to get DH eating it now ....!

shepherds pie for other half with crusty bread and ham, boiled pots, peas and carrots with parsley sauce for me, then i made a lemon drizzle cake with cream cheese and lemon juice filling, we both enjoyed for a change as we have different tastes :)

Potato and cauliflower curry last night, with a dollop of fat-free yoghurt - only 4 ProPoints (Weight Watchers) for the huge bowlful! It was yummy too, and dead easy to make - I'll be having that again when there's only me to please (DD doesn't like curry, and DH would want meat adding, and rice!).

Dried food especially for camping - open top of packet and pour boiling water in, seal packet for 8-10 mins., job done! Easy to carry and store. Lots of varieties. Suits us when we want a quick meal in the camper.

Well buffalo burgers were lovely. Tasty and not fatty at all. Had them in a bun with a little horseradish and salad with some mozerella melted on top.
They were yummy so will be having them again. I oven cooked them on a rack so hopefully not too unhealthy.

Yes it would, you could use any type of cheese or no cheese at all. We had lots of salad in the bun, in fact it was teetering ;D. I'm not a huge fan of burgers to be honest as I find them fatty no matter what way I cook them, but these were lovely. I also like a venison burger.

HB - Now that's the thing, I've had found venison to be a bit of an ordeal when roast or as a steak.
Did you try the crocodile from your butcher?

Not yet but we have had kangaroo. Not sure I liked it that much to be honest.
The trick with venison is not to cook it much at all or slow cook for hours in a nice sauce. I like venison sausages too. Just a bit different.
My butcher goes shooting to some of the big Scottish estates and then sells what he shoots. He also travels to Finland in the winter to shoot there.
There must be money in being a butcher as he lives in one of the biggest houses in town ;D
He is lovely though.

I slice them up and then everyone puts ground black pepper on from a pepper mill.
It's so different but really nice. Also balsamic....just a drop really brings out the flavour.
Give the pepper a go, it's different...oh and slimming ;D

Never really got the sugar on lettuce to be honest but it's supposed to bring out the flavour. Prefer a nice dressing myself.

We're going for a picnic tonight! OH suggested it, we found a lovely place to walk the dogs along the river not far from where we live so we will take our camping chairs, picnic, rugs for the dogs, small bottle of wine and just enjoy the peace and quiet :)

Talking of scales HB, I had asthma check the other day, nurse weighed me. I weighed 8 lbs more on her scales. I wasn't a happy bunny. I've told her I'm losing weight, even if her scales disagree. ::)

not feeling much better today ckld, but only had about 4 hours broken sleep :( , thanks for asking though.
spent the afternoon at sons, lovely sunshine, watching 2 grandsons in paddling pool, and even then felt really down, cant understand it OH feels its down to lack of sleep :-\

Really health dinner Galadriel. Just cube up all the mangoes and avocado and whole prawns. Finely dice a red chilli, some cherry tomatoes and cucumber. Juice of a lime and some olive oil drizzled over. Toss with some coriander and serve with some salad leaves.

Cold chicken, chorizo sausage, pasta, courgettes, yellow peppers, lime pickle and a glass of chilled white wine. I needed strong tastes and something soothing because I came home feeling lurgied. It helped.. ::)

Had lunch out today (red pepper and tomato soup with crusty bread followed by banana loaf with toffee sauce and honeycomb ice cream. Think I hit all the food groups with that!) so was not fit for my tea. Had a sausage roll - rubbish!

we ate out at lunchtime, scampi chips and salad lovely :) so when we got home i went routing through the freezer to find bags of different veg, threw them all in a pan with stock and a few other bits and have made soup for later, it actually tastes better than alot of recipes i have tried

Shouldn't have been, venison is the leanest meat available ……… even when it's farmed. However, I don't like the texture nor flavour although we ate muntjac last year which was sweeter. In the dog now then ? ;D How di dyou cook it?

Last night DD and I had one of our staple meals when there's just the two of us - pasta with a 'sauce' made by mixing Light Philadelphia and lacto-free cream (DD is mildly lactose intolerant, so she reduces her intake where it's easy to do so), broccolli and hot smoked salmon, with a good squeeze of lemon juice. Yummy!

Yes Jenna, but my local Asda hasn't caught on yet! Lady P is fine as long as she's reasonably careful with the lactose, so a dollop of light Philly is not usually a problem.

The trouble with venison grill steaks is they are sort of minced and mixed with other stuff. I have never had any luck with them.
Tonight cooked by my son is....scallops wrapped in Parma ham with black pudding, samphire and courgette ribbons. Followed by strawberries.

last week from my super new cook book I made leek and potato soup and it was awful - then I tried Mango Curry that was totally delicious.
Tonights meal is a mixture, it is leek and potato curry with some pea's from Dad's garden, corgette and celery - smells good so far.
As I now have a bit of a Mango addiction too, we have Mango, pinapple, cherry and blackberries (again from garden) for desert... just to be a bit unhealthy after all that I might just add ice-cream with that healthy fruit stuff.

I grow nothing CLKD, I have a huge bush in the front 'dump' that grows blackberries, though I might as well pick some before the birds get them all ::) my Dad grows the peas and had too many, sorry didnt make that clear.
For tonight, it is chicken salad - I have bought some spicy 'stuff' to rub on the chicken legs, cooked some wholemeal pasta to go with the salad, just boiling some eggs. Prepare the salad, then put chicken in oven before yoga and should be nicely cooked when I get back.. simples ;)
