Tonight we have: Brown rice and kidney bean dish:
Soak brown rice or wild rice (whatever you like) in a bowl of cold water for 10mins.
Meanwhile chop onion, garlic and a red pepper.. fry in rapeseed oil ( or olive oil) and then add smoked paprika, cumin, salt, black pepper or whatever spices you like... maybe chilli if you want..
Saute for a few minutes...
Drain the rice and add to the pan along with passata tomato sauce or any tomato sauce you like...plus some veg stock, put on lid and simmer gently for 15-20 mins or until rice is cooked. Add drained kidney beans or again any beans you like.. chickpeas, etc..
Et voila . yum!
