Trying vegan recipes

Just thought I'd start a thread for anyone who is vegan or is keen to try some vegan recipes..

Today i made an ice cream. Just tried it and I've got to say, it's delicious. 😋

Really easy to make:

1 cup frozen raspberries
2 cups frozen mix of mango, pineapple and strawberries
1/2 cup of almond milk
2 frozen ripe bananas (chopped into chunks before freezing)
1/2 tsp vanilla

Whiz in a blender and freeze for at least an hour in a glass dish with lid. WOW!! 😋

Really nice in these summer evenings!

We grow raspberries and Alpine strawberries and I would love a garden with mangoes .......... although as Terry Wogan said, they need to be eaten in the bath  ;D

Ooh so would I CLKD. Love mangoes! I've got a very small strawberry plant in a pot in garden, which I thought died last year, but it's come back to my surprise. Love raspberries and wild strawberries. Are they the same as Alpine?

True mangoes are a bit messy to cut...  ;D, I cut with a sharp knife, lengthways, skin still on and cut all the way through, either side of the slim stone. Then make criss cross cuts, like you might with avocados..and eat or freeze...

I love mango too!! Recently I've had to throw a few of them out, looked good on buying and ripening at home but no good when gone to eat them - grainy with black lines through. Anyway saw packs of mango fingers the other day, used them for 2 days in my yoghurt with strawbs/rasp and blackberries, the rest (loads left) I've frozen. I think this is now the way to go less wasteage!!
 Saturday's Times magazine had 15 recipe's for vegan beginners those who are interested. x

Mango fingers in yoghurt sounds like my kind of thing! Good idea Foxy!! I will look in Iceland maybe for some frozen fruit ideas. Would like to try making other ice creams. The frozen banana seems to thicken and make it creamy. Yum!

Thanks for the Times recipe idea, will try to get it. I’m starting with easy ones and find it very interesting, especially using cashews to thicken. I’ve done this with celeriac soup too and it’s really lovely.. :)

Pakistani mangoes are the best.  The messiest too  :D

We buy dehydrated mangoes, pineapple etc. for afternoon munching.

I love cashews too, liven up a stir fry. I enjoy meat etc too much to be vegan. Due to a health condition I was advised to stay of red meat for a year - it was torture for me & thankfully I've been fine back on it!  I have however been trying more vegetarian recipes just to mix things up a bit which I've enjoyed.

We're having fun here, about to make a red pepper gazpacho..
Ingredients at the ready:

2 red peppers
1/2 chopped cucumber
3 spring onions chopped
6 plum tomatoes
200 ml chilled tomato juice
Big handful coriander
Pinch sea salt.

Blend on high till almost smooth and chill in fridge until ready for lunch! :)

Anyone remember when people began cooking curries in the UK?  "vesta" in a packet with a bowl of pineapple rings and nuts on the side?

No, but I remember pineapple chunks and cubes of cheese on cocktail sticks being the height of sophistication. ;)

My favourite curry has to be vegetable green Thai with Jasmin rice.

Made a vegan carrot cake using flaxseed meal ( 2 tablespoons ground flaxseeds and 6 tbls of water ) instead of eggs. Worked perfectly, though my oven seems to cook things quicker so had a slightly lower temp. All good and very tasty! Will be doing that one again!  :cupcake:

I went blackberrying.

Just made blackberry easy ice cream.

Wash and freeze the blackberries and 2 ripe bananas cut into thick slices.
Put frozen bananas and blackberries into blender and add a little coconut milk or nut milk. I used coconut/almond.

Easy and quick.

I made a mango salsa tonight to have with cold cooked gammon and new potatoes and runner beans.  fresh mango chopped up with red onion and roasted red peppers (in jar from Lidl).  Sometimes I add chopped cucumber.  Add freshly chopped mint and coriander. it is lovely and I make it all the time.
